Using the traditional fishing tackle, White Tuna (Albacore) or "Thunnus Alalunga" are captured one by one in the Gulf of Biscay at the best time of the season. Serrat's team selects the best fishes, cooks them, and then meticulously prepares and packages the White Tuna (Albacore) using a handmade process. The skill and experience acquired over five generations is the key to the exceptional taste and appearance of our preserves.
In the can the White Tuna (Albacore) fillets "Cogote" contain exclusively the upper part of the White Tuna (Albacore) loin. Due to the softness and the taste of the texture, "Ventresca" fillets (belly) are the most appreciated parts of the fish. Special olive oil is used to cover the Cogote fillets. The unique and intense flavor of this olive oil gives the White Tuna (Albacore) an authentic taste of the sea and the sun-dried fields.
