From the genus of eel, congers are much bigger than other eels. Mesuring up to 2m, they are the largest in their specie, found in the north atlantic seas, and other oceans. Pan-fried, grilled or cooked in casserols, the conger is quite meaty, with an intense flavor. It will be appreciated in portuguese or spanish cuisines, spiced with smoked paprika or garlic.
