Using the traditional fishing tackle, White Tuna (Albacore) or "Thunnus Alalunga" are captured one by one in the Gulf of Biscay at the best time of the season. Because its aroma, its refined taste, its smooth white meat, and its properties, White Tuna (Albacore) composes the elitist range of the tuna fish.
The Serrats team selects the best fish, cooks them, and then prepares and packages White Tuna (Albacore) using a meticulous, handcrafted process. The skill and experience acquired over five generations is the key to the exceptional taste and appearance of our preserves.
A glass jar is crafted from the loins of White Tuna (Albacore). Having been thoroughly cleaned, each loin is manually placed into the glass jar one by one. A specially selected olive oil is then applied to the loins of Albacore Tuna (White Tuna). In addition to its unique taste and aroma, this olive oil gives the White Tuna (Albacore) a taste and aroma reminiscent of the sea and sun-dried fields.
