Asparagus green from Pertuis is the true Provence asparagus, harvested when 10cm of its head is out of the sandy, fertile soil. It is cultivated in the south-east of France, at the feet of Lubéron mountainous heights. This variety doesn’t need to be peeled off and isn’t bitter, compared to its cousin, the white asparagus. To be given the Pertuis specific appellation, this asparagus needs to be green at least for 1/3 of its length.
