Cheese San Pietro in Cera d'API Organic Hard

Historical cheese produced by the Perenzin family, its name comes from San Pietro di Feletto, the town where their company is located. This cheese is made with semi-hard milk, & is the base on the "drunken" cheese or the famous San Pietro in Cera d'Api.

San Pietro has a firm & smooth rind which is yellow in colour, almost ochre in the matured cheese. The paste is pale yellow straw in colour having a bouquet of pleasant dried fruits & hay. This brilliant cheese is very flavourful having woody notes, and also can be spicy & caramel in more matured ones.
