Robiola di Capra is made with organic black summer truffles from Acqualagna. This fresh cheese without rind has a soft white paste, smooth, easy to spread, persistent in the mouth, with a thin layer of truffles in the center. It has a sweet, slightly acidic, and pleasant taste.
The flavor has notes of sour milk with a very strong taste of truffle. Its aftertaste is marked by an acid note which reminds of lemon juice, a slight aroma of goat, and a very sharp taste of truffle.
