Comté Grand Affinage is an unpasteurized pressed cheese from Franche-Comté, France. Comté Grand Affinage is a DOP (Protected Designation of Origin), cheesemakers only use milk from Montbelliarde cows.

It gives a sweet, buttery taste that evolves into a rich, hazelnut flavour while aging. Comté Grand Affinage can mature for 18-24 months in dark, damp caves and are frequently brushed to get this complex flavour and texture.
