The Coeur de Touraine is a delicious cheese with soft paste with a natural crust made up of raw goat’s milk in the farm located in the center region of Indre-et-Loire. Thanks to unmoulding of the cheese into heart-shaped molds which are then sprinkled with charcoal ashes combining amazing flavors of sweet and salty both.
The origin of Coeur de Touraine comes from a village located in the Centre region where at the start of the century, the farmhouse cheesemakers gathered every Friday. Their products were sold at the market, located under the traditional village hall. On the first weekend of June each year, the tradition is carried on with a huge cheese fair. The cheese is made of ash, originally used as a veil to protect the fresh cheese.
