Taleggio Di Grotta is a soft cheese slightly melted. It has a white colour with a reddish, soft, thin and wrinkled rind. It is manufactured in molds with an average weight of about 2 kg each.
The Taleggio Di Grotta maturing lasts for 40-50 days in the natural caves of Pasturo in Valsassina, and all stages of its production process are handled by careful cheesemakers and technical experts who closely follow the tradition.
