Carpaccio of Red Gambero Rosso Prawns

Today, only few fishermen can pretend to really sell the true, original red prawn “gambero rosso”. Not to be confused with the Mozambique red prawns, the Gambero Rosso is much rarer, caught only in the Mediterranean sea, between Cyprus and Turkey, at a depth of 700 meters, in cristal clear water. The fishing trips take usually about one month, carried out with trawls, on which the prawns are directly frozen aboard, thanks to a flash freezing process at -50C°.
Rosso di Mazara was founded in 2013 by two brothers, a company specialized in Gambero Rosso, owning its own boats and certified “friends of the sea”, guaranteeing the sustainability of this rare specie. Gambero Rosso from Rosso di Mazara are also the only red shrimp in the world certified “bisulphite-free”, a preservative that many people are sensitive to, causing sometimes aggravate asthma, abdmonial pain, diarrhea, low blood pressure, hives and other sides effects.
